Wednesday, 16 October is World Food Day and to celebrate, NDIS participant Richard has shared with us his chicken stir fry recipe!
Richard is known at MADEC as our resident MasterChef, thanks to his regular cooking at our Northern Beaches hub. While his repertoire spans curries, burgers, pastas, and more, Richard has chosen to share his chicken stir-fry with the MADEC community for World Food Day. His secret ingredient? Chicken salt!

Richard’s Chicken Stir-Fry
Ingredients
4 cups of water
3 skinless, boneless chicken breast halves, thinly sliced
2 cups of long grain rice
1 head broccoli, broken into florets
1 onion, cut into large chunks
1 green capsicum, cut into matchsticks
1 red capsicum, cut into matchsticks
1 ½ tsp bi-carbonate soda (for velveting chicken)
⅔ cup of soy sauce
½ teaspoon of ginger powder and extra to taste
Chicken salt (to taste)



Method
- Prepare vegetables by cutting onion into large chunks, and capsicums into matchsticks.
- Combine water, a sprinkle of chicken salt and ginger powder (optional), and rice to a boil in a saucepan over high heat. Reduce to medium-low heat, cover, and simmer until liquid has been absorbed – approximately 20-25 minutes.
- Meanwhile, velvet the chicken using ¾ tsp of bi-carbonate soda for every 250g of chicken breast strips. Marinate for 20 minutes, before rinsing well under running water. Pat with a paper towel to remove excess water.
- Mix ginger powder, soy sauce, and chicken salt (to taste) and add to the chicken in a mixing bowl. Let soak.
- Add oil to a pan. Place chicken in pan on medium-high heat until browned and cooked evenly.
- Remove chicken into a bowl and add oil to pan once more. Add broccoli, capsicums, and onion along with a small dash of water. Cook until vegetables are soft and onion is golden-brown.
- Return chicken back to pan and stir through. Add ginger powder and chicken salt to taste and stir through. Serve with rice.
